Whether you’re looking for a quick easy dinner during a busy work week or need a last minute pasta salad to bring to a cookout, this 5 Minute Pea and Arugula Pesto Pasta Salad is the perfect dish that not only tastes delicious, but is ready in just minutes too!
I seriously cannot say enough good things about this recipe. The pesto tastes so light and fresh with the peppery arugula, garlic and a touch of lemon while tossing it with pasta makes everything so hearty and filling. And with grilling season officially in full swing, you’ll want a delicious pasta salad to share with everyone this summer!
Making homemade pesto is one of my favorite things and I almost always have some on hand during the week. Not only is it a healthier way to dress up any pasta dish, but it also makes a delicious topping for pizza, works great as a salad dressing and always tastes perfect on steak or chicken! The possibilities are truly endless, but one thing is definitely certain – pesto can easily be made in just under a minute with only a few simple ingredients.

That’s why I LOVE Barilla’s NEW Ready Pasta! All you need is a microwave (or skillet) and you have delicious fully cooked pasta in just 60 seconds! Sound too good to be true?? Well trust me this works and the pasta tastes just as tender and delicious as boiling them on the stove. Only difference is there is no need to dirty up any pots, wait forever for the water to boil or worry about draining! Perfectly cooked al dente pasta comes right out of the pouch ready to serve in just one minute.
I am ALL about convenience these days so I also love that Barilla Ready Pasta is portable and requires no refrigeration! These pouches fit easily into your purse or bag and are great to bring to the office or when you need something quick on-the-go. They also come in four different shapes – penne, elbow, gemelli and rotini – which just so happen to be my favorite shapes for pasta salads!
This is a total game changer guys. You could also easily cook this pasta in a skillet for just two minutes along with some fresh veggies and your favorite sauce. Easy preparation, hardly any clean-up and countless lunch and dinner options that are super easy with little to no effort!
I also want to note that Barilla Ready Pasta is made with only three simple ingredients – olive oil, sea salt and fully cooked pasta with no preservatives – so you know you can feel good about what your eating. It’s the same great quality pasta you’ve grown to love, just much more convenient to enjoy!
So how did I make this delicious recipe in under 5 minutes?? First I threw all the pesto ingredients into my food processor (no chopping necessary!) then put the pouch of pasta in the microwave. While the pasta cooked, I blended up the pesto then tossed it with the warm pasta along with a little Parmesan, a handful of arugula and some fresh peas. Voila! A quick and easy pasta dinner or side dish that tastes great warm or cold!

5 Minute Pea & Arugula Pesto Pasta Salad
- 1 (8.5 oz) package Barilla Ready Pasta (I used rotini)
- 2 cups loosely packed arugula leaves
- 1 cup fresh or frozen peas, thawed
- 1 cup packed arugula leaves
- ½ cup fresh or frozen peas, thawed
- 1 Tbsp mint leaves
- 2 cloves garlic
- 2 Tbsp pine nuts
- 2 Tbsp freshly grated Parmesan cheese
- 1½ Tbsp lemon juice
- ½ tsp. sea salt
- ¼ tsp. black pepper
- 3 Tbsp olive oil
- Tear the top of the Barilla Ready Pasta pouch and place it in the microwave for 60 seconds.
- In the bowl of your food processor, add arugula, peas, mint leaves, garlic, pine nuts, Parmesan cheese, lemon juice and salt/pepper and pulse until finely chopped. Then with the motor still running, add olive oil in a slow stream until emulsified and creamy. (If you like your pesto thinner, add a little water)
- In a large bowl, toss together warm pasta with pesto, arugula and peas. Season with cracked pepper and a little Parmesan, serve and enjoy!
